PS 7’s is named for the restaurant and bar’s 777 I Street location and the initials of owner Peter Smith. Smith—whose taste for world cuisine stemmed from his military family’s somewhat nomadic existence during his childhood—cooks with the combination of curiosity and reserve one might expect from a chef who left the restaurant scene to experiment with preparing locally-sourced meals at Mount Everest’s Base Camp.
Finding a perfect complement in equally experimental yet firmly grounded barmistress Gina, Smith treats diners to a sophisticated atmosphere, impeccable service, and his uniquely personal interpretations of world cuisine. After relishing Smith’s take on everything from down-home chicken and waffles—lavished with dollops of apricot ricotta and drizzled with vidalia syrup—to arctic char topped with a spicy Asian pear compression and cashew butter, diners return to PS 7’s already anticipating the next surprise Smith will throw their way.
