You must take any chance to experience Chef Beach’s cuisine that you can; the man basically created Seattle’s sushi culture in the 90s. And here’s a chance to experience his cooking at its most creative and personal level. He’s serving up multi-course dinners of the highest art form of traditional Japanese cooking, kaiseki.
Chef Beach only uses the freshest seasonal ingredients, so it’s hard to say what exactly you’ll get. But with possibilities like tenderloin tataki with butter ponzu and dashi broth with snow crab legs and kaiware sprouts, it’s easy to say that you won’t be disappointed.
